Barnsley Resort in Adairsville has named Shaun Doty as Executive Chef for its new restaurant, Jules. The dinner-only restaurant is set to open in late summer and will offer a menu influenced by Southern cuisine, Japanese techniques, and European traditions. Jules joins the resort’s other dining options, including Woodlands and the Biergarten.
The interior of Jules was designed by David Thompson Studio from Charleston and takes inspiration from Julia Barnsley, daughter of the estate’s original owner. The building housing the restaurant was originally constructed in 1854 as a private farmhouse in Rome, Georgia. It was moved to Barnsley Resort in 1994 and previously operated as Rice House after being updated with a commercial kitchen. The current renovation was completed by HDA Architects based in Rome.
Chef Doty will participate in special events at Jules while collaborating closely with chef de cuisine David Doyle, who will manage daily culinary operations. The menu will highlight regional ingredients sourced from the resort’s farm and local suppliers. Dishes are expected to change seasonally with an emphasis on sustainability and ingredient availability.
Doty plans to implement several sustainability initiatives at Jules, including starting a fermentation program, exploring composting practices, and using menus printed on recycled paper or sustainable materials. These efforts are part of his goal to earn a Michelin Green Star for the restaurant.
With more than thirty years of experience, Doty is recognized for his leadership at Atlanta’s The Federal—a James Beard nominee for Best New Restaurant—and for opening several Atlanta establishments such as Shaun’s, Yeah Burger, and Bantam & Biddy. He began his career at Ritz-Carlton Buckhead under Chef Guenter Seeger before working at Michelin-starred restaurants in France and Belgium.
The revival of Jules is part of a broader renovation plan led by South Street Partners, owners of Barnsley Resort. This plan includes recently finished updates to the property’s cottages and guest rooms by Charlotte Lucas Design from Charlotte.
