NoriFish and Okiboru to join Ponce City Market’s Central Food Hall in spring 2026

NoriFish and Okiboru, two Japanese dining concepts led by Atlanta locals Sean Park and Justin Lim, are set to open at Ponce City Market’s Central Food Hall in spring 2026. NoriFish specializes in sushi using fresh seafood flown twice weekly from Tokyo’s Toyosu Fish Market. The menu will rotate based on seasonal availability and feature signature rolls, nigiri, premium seafood, small plates, and warm dishes. The beverage selection will include craft cocktails created by Atlanta mixologist Hendry Kurniawan, sake options, local and Japanese lagers, and wines. Chef Park founded NoriFish in 2022; it currently operates locations in Buckhead and Sandy Springs.

Okiboru was co-founded by Park and Lim in Los Angeles in 2018 and has received a MICHELIN Bib Gourmand award. Its menu focuses on tsukemen (dipping noodles) and ramen with house-made noodles and broths rich in collagen. Appetizers, rice dishes, cocktails, sake varieties, lagers, craft beers, teas, and soft drinks will also be available. Okiboru already has locations across Sandy Springs, Buckhead, Duluth, Buford, and three sites in New York.

According to the announcement: “Together, NoriFish and Okiboru represent a modern interpretation of Japanese dining –– one that honors tradition while pushing flavor forward. NoriFish and Okiboru are designed to reflect the brands’ core values: integrity, discipline and an uncompromising commitment to quality.”

Ponce City Market is also preparing to welcome several other new businesses this year. These include Terminal 26 (a Thai street food restaurant), La Cueva (a cocktail lounge and listening room), The Commodore (a traditional barbershop), and Three Taverns Brew Terminal (a brewery/distillery/taproom with food from DAS BBQ).
